Day 1:
I roasted a whole chicken yesterday. I didn't follow a recipe--I just put spices on it--oregano--cayenne--salt, pepper, garlic, and then a big glob of coconut oil. I put it in the oven and cooked it until it was done. (sorry, I don't have specifics on this!) :) Last night we ate the chicken, with some salad and potato salad.Day 2:
I soaked some black beans last night, and then started them in the crockpot this morning using this recipe. (Suggestion-use the amount of onions and garlic suggested, and do add salt. Mine were bland, but I didn't use salt & didn't put as many onions & garlic in).
Hubby prepped dinner tonight--heated corn tortillas (on the griddle--2 together at a time, slightly off (not perfectly lined up on each other), so that it makes a nice soft center between the 2--eat 2 together at a time to make a yummy taco). We had the beans, tortillas, leftover shredded chicken, cheese, sour cream, homemade salsa (I used this recipe & canned a bunch), lettuce, and a side of Juanitas chips (the BEST tortilla chips out there, and cheap, too!).
Day 3:
I plan to put the carcass in the crockpot with herbs, onion, garlic, etc. to make a nice tasting stock. Then I want to make some kind of soup (with about 1 cup of leftover meat). Any suggestions? What should I make?

LOL - roasted a chicken yesterday . . . had crockpot enchiladas w/ LO chicken and corn tortillas tonight and just getting ready to throw the bones and some veggies in the pot to simmer all night for broth :) great minds think alike!
